•Saccharomyces is a genus in the kingdom of fungi that includes many types of yeast. Saccharomyces is derived from the Latin word meaning sugar fungi.

•Many members of this genus are considered very important in food production. One example is Saccharomyces cerevisiae, which is used in the manufacture of wine, bread, and beer.
•Other members of this genus, including Saccharomyces bayanus, are used in the manufacture of wine, and Saccharomyces boulardii, used in medicine. Because of its ability to produce these alcohols, S. cerevisiae microorganisms called safe (Generally Regarded as Safe), the most commercially today. By producing a variety of alcoholic beverages, microorganisms oldest human bred by this enables the process of the world's first biotechnology.
