•Other members of this genus, including Saccharomyces bayanus, are used in the manufacture of wine, and Saccharomyces boulardii, used in medicine. Because of its ability to produce these alcohols, S. cerevisiae microorganisms called safe (Generally Regarded as Safe), the most commercially today.
